Raspberry & Oat Crumble Bars

  • Oat Bar & Crumble
  • 1 cup rolled oats

  • 2 cups all-purpose flour

  • 1 cup brown sugar

  • 3/4 cup shredded coconut

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/3 blanched hazelnuts, chopped

  • 200g salted butter, chilled

  • Raspberry Jam
  • 3 punnets of raspberries

  • 1/3 cup cornflour

  • 1/4 caster (superfine) sugar


  • Preheat oven to 350°F/180°C. Line a 9x5in brownie pan with baking paper.
  • Use hands to combine the oats, flour, brown sugar, shredded coconut, baking powder, cinnamon, hazelnuts, and butter.
  • Spoon 2/3 of the mixture into the pan. Spread evenly and press until firm.
  • Bake for 20 minutes.
  • While that is baking, place the raspberries, cornflour, and caster sugar in a separate bowl. Combine first by lightly crushing with a fork, then stir.
  • Once the oat mixture is out of the oven, spread the raspberry mixture evenly on top. Then scatter the rest of the oat mixture on top.
  • Bake for 35 minutes.
  • Let cool. Cut and serve.
