Raspberry & Oat Crumble Bars
Ingredients
- Oat Bar & Crumble
1 cup rolled oats
2 cups all-purpose flour
1 cup brown sugar
3/4 cup shredded coconut
1 tsp baking powder
1/2 tsp cinnamon
1/3 blanched hazelnuts, chopped
200g salted butter, chilled
- Raspberry Jam
3 punnets of raspberries
1/3 cup cornflour
1/4 caster (superfine) sugar
Directions
- Preheat oven to 350°F/180°C. Line a 9x5in brownie pan with baking paper.
- Use hands to combine the oats, flour, brown sugar, shredded coconut, baking powder, cinnamon, hazelnuts, and butter.
- Spoon 2/3 of the mixture into the pan. Spread evenly and press until firm.
- Bake for 20 minutes.
- While that is baking, place the raspberries, cornflour, and caster sugar in a separate bowl. Combine first by lightly crushing with a fork, then stir.
- Once the oat mixture is out of the oven, spread the raspberry mixture evenly on top. Then scatter the rest of the oat mixture on top.
- Bake for 35 minutes.
- Let cool. Cut and serve.
